What I Ate Today: Chicken Salad


In an attempt to acquire a healthier lifestyle, I have been being a lot more careful about what I choose to eat. I thought that it would be a great idea to start blogging more about my meals to give me a fun initiative to see this health kick through.

Today for dinner, I made myself a salad which consisted of rocket, spinach, watercress, red onion, orange pepper, cucumber, tomato, radish, and southern fried chicken. I usually have about half of this portion for lunch with cold chicken breast strips, but as it was my evening meal I decided to make a bigger batch and cook some southern fried chicken to really bulk it up. The dressing that I used was a Caesar dressing as it compliments the chicken very well.



I always try to add as much salad as possible because I love the different flavours that come together, and I also really like how vibrant it makes the salad! (See, not all healthy food is green and boring)


It was so delicious and full of flavour! I would definitely recommend experimenting with different salads, meats, and dressings as changing just one factor can make your healthy eating experience a lot more enjoyable!
