If you know me, then you know that I love cake. As much as I am moving towards a healthier lifestyle, I refuse to eliminate cake from my diet completely because we all need a treat every now and then don't we? As long as it is eaten in moderation, then there is no need to cut it out.
I love baking, just as much as eating cake, so I am always on the hunt for new recipes to try out and indulge in. My mum's best friend recently returned from nine months of travelling round Australia, so to mark the occasion I wanted to bake something delicious for her. I scouted Pinterest for something quick, easy, and full of chocolate-y goodness, and I found a recipe for a chocolate chip cookie cake.

I started off by prepping my ingredients:
12 tablespoons (3/4 cup) salted butter
3/4 cup light brown sugar
1/4 cup granulated sugar
1 large egg
1 egg yolk
2 cups plain flour
2 teaspoons baking powder
1 tablespoon vanilla extract
3/4 cup chopped chocolate (I used crispy M&M's, chocolate M&M's, and Daim Dairy Milk), divided
1/2 cup chocolate chips (I used milk chocolate chips)
After preheating the oven, I greased up a 9-inch pie dish with Coconut Oil. This is a healthier alternative to margarine or cooking spray. I combined the flour and baking powder in a medium bowl, and set it to one side whilst I worked with the rest of my ingredients.
In another bowl, I beat the butter for 2 minutes with a wooden spoon until it was completely smooth and creamy. You can use an electric mixer with a paddle attachment, but I prefer to use a wooden spoon when I am working with butter to ensure that I get the right consistency. I would highly recommend taking the butter out of the fridge an hour before you start baking, so that it has time to soften and will therefore be easier to beat. Once I had got the right consistency, I added the brown sugar and granulated sugar, and continued to beat the mixture until it was creamy again.

I added in the egg, egg yolk, and vanilla extract before mixing it again. Once it was just combined, I slowly mixed in the plain flour and baking powder that I had set aside earlier. After mixing everything together until it was just combined, I folded in 1/2 cup of the chopped chocolate, and most of the chocolate chips. Remember to leave some of the chocolate for the topping!
Once I was satisfied with the mixture, I pressed the cookie dough evenly into the pie dish that I had prepared earlier. I then topped the batter with the rest of the chocolate, making sure that it was evenly distributed.
I then placed the cookie cake into the oven, and set the timer for 15 minutes. At the 15 minute mark, I took the dish out of the oven and covered it loosely with foil to avoid excess browning. I then placed the cake back into the oven for another 15 minutes. If you want the cake to be a bit crispier, then you could leave it in for longer but I wanted to purposely under-bake it a little so that it was firm but still had a chewy consistency.
After the total cooking time of 30 minutes, I took the pie dish out of the oven and placed it on a wire rack where I left it to cool completely.
This recipe was so quick and easy to follow, and I would highly recommend it to those of you who love chocolate, cookies and cake! I received a great reception from everyone who tasted it, and I will definitely be baking it again.
